Basque Cheesecake

Ingredients:

Cream cheese 500 gr
Sugar 120 gr
Eggs 200 gr
Heavy cream 35% 300 gr
Corn starch 25 gr
Vanilla extract 10 gr

Process:

1. Wrap the mould you will use with foil outside and cover with the baking paper inside (sides as well). Preheat the oven to 250 degrees.
2. On a low speed mix cream cheese with sugar until sugar is dissolved.
3. Add cornstarch and mix well.
4. Start adding eggs, one by one until the texture is smooth and creamy.
5. Pour in a mould and bake for 23-25 minutes. Leave to cool overnight.
